The daily bake at Moon Oryx Bakery is a short list done well. We mix dough the day before, retarding loaves so flavor deepens without rushing yeast. Morning staff score and bake while the shop is still dim, so the first customers meet crust that crackles for the right reasons.

Expect sourdough boules, a soft sandwich tin, and at least one seeded option. Rye appears several days each week. Pastries rotate: cardamom is nearly constant; fruit depends on what ships well to Reykjavik.

We bake out rather than holding stale stock. When a shelf empties, it empties—come earlier if you need a specific loaf. Pre-orders for morning pickup are welcome via the contact form with a day’s notice.

Ingredients stay readable: flour, water, salt, preferments, butter, eggs, sugar where pastry needs it. No novelty colors pretending to be flavor.

Scoring patterns are practical, not branding tattoos. They guide expansion so crumb stays open where it should. If a loaf looks rustic, that is process, not neglect. We cool bread on racks before bagging so steam does not soften crust into regret.
